💥 Chicken pesto rice dish 💥

Makes 4 serves
Per serve:
• 519 cals
• 58.4g protein
• 53.6g carbs
• 12.3g fat

Ingredients:
• 200g white long grain rice
• 500g raw chicken breast
• 100g basil pesto (Leggos)
• 320g Chobani natural light Greek yoghurt
• 100g semi dried tomato strips (Sandhurst)
• 200g red capsicum
• 150g baby spinach (Coles)
• 120g red onion
• 70g grated mozzarella cheese (Perfect Italiano)
• 400ml chicken stock (Coles Real Chicken Stock)

Method/tips

  1. Throw all the ingredients in a large dish (leave out the mozzarella)
  2. Cover in alfoil and bake at 180 degrees for 65ish mins
  3. Remove alfoil, add mozzarella and pop back in the oven for 10-15mins
