Ingredients:
• 200g white long grain rice
• 500g raw chicken breast
• 100g basil pesto (Leggos)
• 320g Chobani natural light Greek yoghurt
• 100g semi dried tomato strips (Sandhurst)
• 200g red capsicum
• 150g baby spinach (Coles)
• 120g red onion
• 70g grated mozzarella cheese (Perfect Italiano)
• 400ml chicken stock (Coles Real Chicken Stock)
Method/tips
- Throw all the ingredients in a large dish (leave out the mozzarella)
- Cover in alfoil and bake at 180 degrees for 65ish mins
- Remove alfoil, add mozzarella and pop back in the oven for 10-15mins
