this is how I shape my high hydration sourdough loaves

Sourdough Country Loaf
Formula (Baker's %)
* 97.5% T55 flour
* 2.5% Flour X (Wholewheat flour)
* 30% levain
* 85% water
* 2% Salt

277 28
gto16108 Your results speak for themselves, so please don’t take this as even a single ounce of hate. I just can’t for the life of me understand why you would play the dough in banneton seam-side up.

Can you explain please?

AnStar24 Author Not at all! Thats because I turn the banetton upside down onto the parchment paper before placing the loaf in the oven so eventually the seam goes at the bottom 4d ago 19 likes
carlos_the_dwarf_ Isn’t that the typical way? 4d ago 15 likes
breadwound That's how it is supposed to be done. The seam is then on the bottom of the loaf when you load it in the oven. 4d ago 10 likes
gto16108 The entire Modernist Bread always proofs seam-side down, so I would say this is a style, not “fact” 4d ago
breadwound So does Flour Water Yeast Salt. It gives you a "natural" looking tear on your loaf, but you can't score them well with the seam facing up in the oven. Seam up in the banneton is the norm. 4d ago 5 likes
Confusedlemure How do you get it out of the banneton? Either you would have to reach in with your fingers to get under it or you would flip it out, then turn it over. Either way seems needlessly tedious. Just put it in seam side up and flip it out onto your counter. I must be missing something. 3d ago 1 like
sametimesometimes Not OP, but: so you can stitch the seam once it’s in the banneton and so that your scoring is more effective because the seam doesn’t provide weak points in the top surface of the bread while baking. 4d ago 5 likes
bork00IlIllI0O0O1011 I just can’t for the life of me understand why you would play the dough in banneton seam-side up.I don’t get why it’s so baffling — it’s the way the vast majority of sourdough makers operate these days.

I get disagreeing or having a different style, but your “I just can’t for the life of me understand,” is quite dramatic, no?
