dolfin4 Author Κολοκυθόπιτα Γλυκιά - Kolokythópita Glykiá (squash/pumpkin pie - dessert) versions that contain egg and/or dairy vegan version custard version ( bougátsa - kolokythópita hybrid) Here's a wonderful seasonal dessert for this time of year! Kolokythópita glykiá is a pumpkin pie. The main ingredient for the filling is kolokýtha in Greek, it's what you would call pumpkin in British English. In American English, both pumpkin and butternut squash are good! Below, are several recipes in both English and Greek, including some recipes in video form. I've also separated the egg & dairy versions from the vegan versions. (Heads up: some of the vegan versions include honey, which you can try substituting with something else, such as a homemade sugar syrup, a maple syrup, or an agave syrup). Take a look and browse through the recipes, because they differ quite a bit. For some, the filling is strictly squash/pumpkin-based, while others add ingredients such as raisins and walnuts. Also, some add rice or bread crumbs to absorb the moisture. Others do this job with just flour, for a smoother texture. One recipe is a bougátsa - kolokythópita hybrid, where the recipe follows the steps for creating custard, but with the addition of squash/pumpkin. Since this is a pie, you will need a crust. But what kind of crust? If you haven't already seen or saved my previous post about "phyllo", have a look here . Fýllo in Greek actually just means pie crust or sheet of dough; it can be any thickness. The paper-thin fýllo that the Anglosphere calls "phyllo" or "phyllo dough" or "Greek phyllo" is specifically fýllo kroústas . Some of the recipes make use of fýllo kroústas, while others use the fýllo horiátiko crust, which is just a more regular, thicker crust. You can make it as thin or as thick as you like; it can can be as thick as Anglosphere pie crust. Some of the recipes include instructions to just you make your own pie crust, while a few use store-bought fýllo horiátiko. If the recipe you use does not include instructions to make your own, just cross-reference the other recipes, or here's a recipe to make it from Argiro . Lastly, some recipes use sfoliáta, which is puff pastry. Lastly, there are several ways to shape this pie. Many of them are a traditional round or rectangular pie, while some recipes shape them into rolls or snail form! So, take a look and see what appeals to you the most!
